Dwaeji-gukbap, bokguk, jaecheopguk and milmyeon are easier solo decisions than a shared seafood table with an unclear minimum.

국 is soup, 탕 is a larger soup or hot pot, 볶음 is stir-fried, 찜 is braised or steamed, 구이 is grilled and 백반 signals a rice set.

What can still change

  • This is an editorial menu guide, not a consumption-frequency survey. Busan Metropolitan City's 2026 guide identifies traditional local dishes, but individual habits differ by age, district, diet and household.
  • Do not try all nine in one day. Choose one solo bowl or one shared night dish that fits the people, ingredients and district already in your plan.
  • A restaurant name in an official directory is an example and not a permanent endorsement. Menus, prices, hours, closing days, portions and ownership can change.
  • Dwaeji-gukbap and suyuk-baekban contain pork. Broth, salted shrimp, fish sauce, sundae, offal and shared utensils can matter even when a visible topping is removed.
  • Bokguk is pufferfish soup. Eat it only at a qualified food business; never buy unprocessed pufferfish or attempt preparation yourself.
  • Jaecheop, nakji and mixed seafood are molluscan shellfish or may share shellfish equipment. Haemultang can combine several fish and shellfish in one pot.
  • Gomjangeo means hagfish, not the same animal as freshwater eel or conger eel. Choose salt-grilled or seasoned before the grill starts.
  • Shared dishes can have minimum portions and rice, noodles or finishing fried rice may cost extra. Confirm size, add-ins and the full total before ordering.
  • For severe allergies, use a restaurant able to explain broth, sauce and cross-contact. If breathing difficulty, swelling or faintness occurs, call 119.
