    Rice and toppings can be mixed with gochujang gradually when the restaurant serves it separately. Say this before assembly, then check whether another red seasoning is already on the vegetables.

What can still change

  • These eight dishes are low-chilli starting points, not guarantees that every restaurant version is mild, chilli-free, vegetarian, halal, gluten-free or allergy-safe.
  • Say '매운 음식 못 먹어요' and ask '고추가 들어가요?' before ordering. If zero chilli is a hard medical limit, show a precise Korean restriction card and confirm the full recipe and cross-contact limits.
  • Ask for gochujang or chilli seasoning separately before assembly. Removing sauce, garnish or visible chilli after cooking does not remove seasoning already mixed into vegetables, broth, dumpling filling or marinade.
  • Seolleongtang contains beef and bones; samgyetang contains a whole chicken and bones; kalguksu contains wheat and may use chicken, beef, anchovy or shellfish broth; mandu-guk can contain meat, egg, tofu and wheat.
  • Bibimbap commonly includes egg and can include beef; beef bulgogi uses soy-based marinade while pork bulgogi can be red and spicy; japchae commonly uses soy seasoning and can include beef; gyeran-jjim contains egg and may contain stock.
  • Kimchi, kkakdugi, seasoned vegetables, dipping sauces and green chilli can arrive automatically. Keep them on their own plates and do not mix them into the main bowl until confirmed.
  • A restaurant's 'not spicy' answer describes that recipe and a subjective taste. It does not promise zero capsaicin, a sterile kitchen or a match for a medical restriction.
  • Do not use plain rice, milk, egg, soup or another food as a promised antidote or medical treatment. Each has ingredients and may not be suitable for every traveler.

  • Choose one complete meal, confirm the portion and keep one labeled fallback nearby. The goal is a workable order, not tasting all eight dishes in one day.
